These are amazing!  I made these for Christmas this year.  My Maw Maw usually makes the candy but over the last few years the responsibility has been handed down to yours truly, which makes me really happy because I love doing it!  This recipe is really easy.  The rice krispies give it a more airy texture than just regular peanut butter balls.  And no, you can't cut back on the amount of powdered sugar you add because I tried and they are way too sticky without all 4 cups!  Yea, 4!  Probably not the best thing for a pre-diabetic to eat a lot of and so I don't!  Plus, they are pretty rich so I recommend making them small. The only alteration I made is that, instead of buying chocolate chips and melting them to dip the peanut butter balls in, I use ghirardelli dipping chocolate.  It is so much easier, it hardens with a smooth, glossiness and I already use it when I make pecan carmel turtles so during the Christmas season I know I'll have some on hand.  I can only find it at Sams and they usually put it out around Thanksgiving and Christmas, not sure if it can be bought year round so you can stock up on it and freeze some.  It is seriously the best dipping chocolate for anything, I actually have some left over and plan to dip strawberries for Valentine's day ;)
